
My mom brought home a recipe from a co-worker to make chocolate cake in the microwave. It is really a cute idea and my kids loved it. The cake is not super sweet, but with a nice scoop of vanilla ice cream it is great. Here is the recipe:
4 tablespoons flour
4 tablespoons sugar
2 tablespoons unsweetened cocoa
1 small egg( I used a large and it turned out fine)
3 tablespoons milk or water
3 tablespoons vegetable oil
a few drops of vanilla
Mix the dry ingredients in a microwave safe mug and use a fork to stir in the egg, milk, oil and vanilla until everything is evenly moistened. Microwave the cake on high for 3 mins. The cake will rise and shrink back down. Let the cake stand to cool a little, then eat it out of the mug. Add ice cream or whipped topping if you like.
This pic was our second attempt. You do not have any run over if you use either a taller mug or wider mug. The standard coffee mug caused it to run over, but it was still fun and was not really messy. It would be great on those days when your kids want to make their own treat.
